Methods and Techniques to Assess Food Quality - FQM 470

This course will cover a number of chemical reactions occurring in food during its deterioration and the chemical changes happening during, production and processing. The focus will be made on the chemical reactions as well as on the techniques and methods used to measure those changes. Prerequisites: NTR/FQM 320 and NTR/FQM 325. Passing grade for majors: “C”
